Pumpkin-Oatmeal Bars
- 1/3 cup sugar
- 3 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon clove
- 1/2 cup orange juice
- 1/2 cup dark or golden raisins
- 1/4 cup coconut
- 1/2 cup vegetable oil
- 1 egg
- 1 cup canned or cooked pumpkin
- 1 1/2 cup flour
- 3/4 cup oatmeal
- 1/2 cup chopped nuts
- Cream together the sugar, oil, egg, and pumpkin until light and fluffy. Stir in flour, oatmeal, baking powder, baking soda, nutmeg, cinnamon, cloves, and orange juice.
- Add the nuts and raisins. Stir to blend. Pour into a lightly oiled 13 x 9 inch pan. Sprinkle with coconut. Bake at 350 degrees for 25-30 minutes. Cool the pan on a wire rack for 5 minutes.
- Cut into bars and serve.
