Pumpkin-Oatmeal Bars

  • 1/3 cup sugar
  • 3 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 1/2 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 1/2 cup orange juice
  • 1/2 cup dark or golden raisins
  • 1/4 cup coconut
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup canned or cooked pumpkin
  • 1 1/2 cup flour
  • 3/4 cup oatmeal
  • 1/2 cup chopped nuts
  1. Cream together the sugar, oil, egg, and pumpkin until light and fluffy.  Stir in flour, oatmeal, baking powder, baking soda, nutmeg, cinnamon, cloves, and orange juice.
  2. Add the nuts and raisins. Stir to blend.  Pour into a lightly oiled 13 x 9 inch pan. Sprinkle with coconut.  Bake at 350 degrees for 25-30 minutes. Cool the pan on a wire rack for 5 minutes.
  3. Cut into bars and serve.
